Welcome back! Welcome back after a fabulous summer to another "new" year! I always feel like September - not January is the start of a new year. This is when we resume classes, formulate plans, create projects and get back to work. What are you going back to?

I hope this newsletter will motivate you to get back on track with your health so that you'll have the energy to fulfill those big goals and plans.

    The Truth about Healthy Oils
    I am always looking for articles which affirm my belief in the principle that the body knows. It has infinite wisdom and regardless of what the researchers and experts say, the body knows best!

    Dr. Joseph Mercola, an osteopathic physician, author and important voice in the alternative health care scene publishes an email newsletter each month. I am so grateful to my husband Gary for introducing me to Dr. Mercolas work. You may have heard of Dr. Mercolas ground breaking book  The No Grain Diet (Dutton 2003).
    As a medical intuitive and health educator, I counsel thousands of people whose bodies are compromised because of the over-consumption of grain. In my opinion the key to effective weight loss, blood sugar regulation, memory improvement and well-being is the drastic reduction in starch and sugar consumption.
    Dr. Mercolas website is full of very revealing studies and information that will get you thinking.

    According to Dr. Mercola, coconut oil one of the healthiest oil you can consume. It is rich in lauric acid, which is known for being antiviral, antibacterial and antifungal, and it contains no trans fat (even olive oil has some trans fat). You can even use it on your skin to help prevent wrinkles.
    In India, where my father was a doctor, I spent some time as a teenager. My parents employed a beautiful young woman named Ratnabai to care for my baby brother. Every week, Ratnabai like millions of Indian women, would bathe and then massage coconut oil into her hair before she braided it. She had the most beautiful luxurious hair and skin  nourished by the coconut oil.

    There is a widespread misconception that coconut oil is bad for you, says Dr. Mercola, because it contains saturated fat. To really understand the benefits of coconut oil, I suggest you read Dr. Mary Enig and Sally Fallons article "The Truth About Saturated Fat" posted on m to first dispel any lingering notions you may have that all saturated fats are dangerous.
    Fats are categorized as either: short, medium, or long-chain depending on how many carbon molecules they contain. Close to two-thirds of the saturated fat in coconut oil is made up of medium-chain fatty acids, which have antimicrobial properties, are easily digested by the body for quick energy, and are beneficial to the immune system. Far from being dangerous, the saturated fat in coconut oil is actually health promoting.

    So how, says Dr. Mercola, could an oil that is so good for you have received such a bad reputation? The answer comes down to simple economics and politics. Based on some flawed studies performed over four decades ago, some of which used primarily hydrogenated coconut oils, a powerful anti-saturated fat movement began.
    Remember-hydrogenated oils are oils with trans-fatty acids, which have been altered from their original chemical composition and have been shown to raise cholesterol levels and lead to heart disease and other health problems.
    You should not consume hydrogenated oils, whether it is coconut or another vegetable oil.

    Around this time the edible oil industry began to denounce all saturated fats and heavily promote polyunsaturated fats such as canola, soybean, safflower, corn, and other seed and nut oils. However, these oils easily become rancid when exposed to oxygen and produce large amounts of damaging free radicals in the body.
    What is not commonly known is that these oils can actually cause aging, clotting, inflammation, cancer and weight gain. You can read the article "Secrets of the Edible Oil Industry" on for more information.
    There is evidence to show that these polyunsaturated fats listed above interfere with the cell walls ability to utilize insulin. One of the key roles of insulin is to regulate the amount of sugar circulating in the body. This results in insulin resistance and could lead to diabetes and weight gain because the body converts the sugar to fat which is stored in the tissue  especially around the waist.
    The only way to make insulin more effect is to improve the quality of the cell wall, by removing sugars and high glycemic/starchy foods and to change your oil consumption to olive oil, butter and coconut oil.
    Fortunately, coconut oil has begun to gain some positive media exposure as researchers realize its health-promoting qualities. However, coconut oil can vary widely in terms of the types of coconuts used, the manufacturing processes used to make the oil. These factors play a major role in the effectiveness of the oil. Always look for certified organic virgin coconut oil.

    I like to make a special nut granola: Take 5 cups of a mixture of any raw, unroasted nuts and seeds that you like: pecans, walnuts, almonds, sunflower seeds, pistachio nuts etc. Add 1 cup of coconut ribbons (available at the health food store). Mix all ingredients well. Coat nuts well with 4/5 tablespoons of melted organic virgin coconut oil (use your hands) and bake in a 300 degree oven for about 30 minutes, turning with a spoon every 10 minutes until golden brown. Sprinkle with a little stevia/sweeter powder when cool.
    Enjoy with 1/4 cup of coconut milk poured over the top!


    Column: The Body Knows - Ask a Medical Intuitive

    Dear Caroline
    I have been having stomach problems lately. My doctor has suggested medication for acid reflux and although it seems to be helping, I am reluctant to be on medication for something that I feel should have a simple explanation and solution. Can you help?

    Dear Janet,
    The important first step that you have taken, to see your medical doctor is worth a full column. I am continually concerned that people do not consult with their physician when they have health concerns. But, your desire to investigate further, leads you into the layers behind common symptoms.
    On the physical level, in my experience, the stomach will directly reflect through pain or symptoms, what you are putting in to it  your food! You do not mention your age, but around 40  45 years of age, hydrochloric acid production wanes. HCL is necessary for the breakdown of proteins. If you are eating starches and proteins together, the combination of these two substances can lead to gas, bloating, distension and pain.

    A purist would probably recommend that you eat protein and vegetables together at a meal, and vegetables and starches together at another meal.
    As a medical intuitive and health educator, I see thousands of people each year and not everyone wants to be purists. We have to live in the world and I like to make things simple.
    The easiest way out of the problem is to take digestive enzymes with each meal. Look for one which contains hydrochloric acid if you are over the age of 45.
    Now lets take a look at your foods.
    Sugar, dairy products and caffeine are the worst offenders for stomach problems  taken all together  ouch!
    As an experiment, avoid these items for 5 days and in most cases this will bring welcome relief.

    Stomach problems on an emotional level represent an issue that may be difficult to stomach, digest or integrate onto ones life.
    The stomach on a spiritual level represents the power center of the body. When people are having digestive problems, it usually means that they are giving their power away to people, places and things outside of themselves. They can defer to people that they perceive to be more powerful, competent or more worthy than they are.
    Take a look at where vital energy is flowing out of your body.

    Our deepest desire is to invest our energy in our creative potential, our higher purpose and our spiritual connection.

    An interesting exercise is to close your eyes and imagine that your stomach is a flame  just like a flame in a furnace. Is the flame that you see, weak, smoky or even completely extinguished? Ask the flame to show you a picture of why it is less than full power on.
    Your ultimate goal is to see this flame as bright, clean, steady and strong, signifying that your power to digest on the physical and emotional level is intact.
