I hope you are all having a delightful summer - maybe getting some downtime with your nose in a book and your toes in the sand! This is a time of year when we re-charge our batteries and add to our memory banks. I have been having some great boating adventures here in the Northwest with cabin- hopping time with friends and family - my kind of summer! In this newsletter I recommend two great books and a wrap recipe that is easy and delicious. Summer goes by quickly - take advantage and enjoy!

Yummy Recipe!

Curried Chicken Wrap

I love this curried chicken wrap - crunch, flavor and zip!

2 cups cubed, cooked chicken

1 /2 cup mayonnaise

1 - 2 tbsp curry powder

¼ cup raisins

1/2 cup cashew nuts

¼ cup cilantro

1 cup shredded romaine lettuce

1 package rice flour or spelt flour wraps

Place 4 rice flour wraps on counter or cutting board. Spread with mayo pre-mixed with curry powder. Build each wrap by adding equal amounts of remaining ingredients. Roll up. Cover each wrap with a moistened paper towel. Refrigerate until ready to serve. Serves four.

Summer Reading!
Two Books I like

I seem to get my nose into books during the summer. I thoroughly enjoyed The Boys In The Boat: Nine Americans and Their Epic Quest for Gold at the 1936 Berlin Olympics by Daniel James Brown. This book celebrates the 1936 U.S. men's Olympic eight-oar rowing team-nine working class boys from Seattle Washington who stormed the rowing world, transformed the sport, and galvanized the attention of millions of people around the world. This powerful story also highlights oarsman Joe Rantz and his personal struggles as a child and young adult, and how he overcame them.

Elephant Company

My second favorite book this summer is Elephant Company: The Inspiring Story of an Unlikely Hero and the Animals Who Helped Him Save Lives in World War II. Vicki Constantine Croke tells the story of James Howard "Billy" Williams, whose uncanny rapport with elephants transformed him from a carefree young man into the charismatic war hero known as Elephant Bill. You'll discover all about the sensitive world of elephants in this book and their phenomenal instincts and capabilities. A real page-turner!

Just as another note on elephants and their amazing sensitivity, you will be interested in this moving story of elephants coming from great distances to honor the life of famed elephant whisperer Lawrence Anthony.
