October Newsletter - Nurture Yourself!

Caroline Sutherland's Newsletter, October 2014

In this issue

Hello Everyone,

October is a special month when the crisp fall air makes us think of turning inward and nurturing ourselves.

Last weekend I had a wonderful invitation to visit a friend on an island in the Pacific North West. With all of the changes in my life in the past few months, it was a blessing to take a few days to nurture myself. The cabin has a spectacular view on a rocky point above the ocean. I set up a chaise with several blankets on the covered porch - the perfect perch to sit with a cup of tea and a good book. From that vantage point I could see the changes in the ocean, the boats, tugs, and barges going by.

I also had the spectacular experience of watching a humpback whale lazily enjoying the bay for several hours. I saw a school of dolphin swim by, plus seals slapping in the water beneath me along with several loons - altogether magical! But the crowning glory was the wood stove upon which, I created a pot of soup from scratch, and a marvelous stew full of herbs, button mushrooms, and shallots bubbling away on that wood stove for the whole day. Three days of heaven and nurturing down to the core of my being.

What are you doing to nurture yourself?

Beef Stew on a Wood Stove

Start with a Dutch oven with a thick bottom, which acts like a slow cooker on top of the stove to cook soups, stews, casseroles, and roasts. The tight-fitting lid keeps juices in and ensures moist, flavorful meat. A metal trivet allows you to regulate the heat so the bottom of the pot doesn't burn. Wood stoves can get extremely hot!

Start by putting all your ingredients in the Dutch oven. Place the oven, uncovered, on top of the hot woodstove.

In 15 minutes or less, the ingredients should start to bubble. Set the trivet on the stove and move the Dutch oven onto the trivet. Put the lid on the pot and allow ingredients to cook like a slow cooker. You can leave soups and stews on a wood stove all day. A roast with vegetables takes three to four hours. Check the stew every half hour or so to make sure food is not sticking to the pot, and that the stew is still hot. If the wood fire dies down and the food in the pot starts to cool, crank up the fire again!

1 pound cubed organic stew beef

3 Yukon Gold potatoes

3 carrots - chopped

4 stalks celery - chopped

1 large onion - sliced

6 shallots - peeled and sliced

4 cloves of garlic - chopped

12 button mushrooms - trimmed

Salt and pepper to taste

1 tbsp Bouquet Garni or French herbs

2 cups organic beef stock - you may need to add more as juices cook down

1 cup red wine

Brown 1 lb cubed stew beef in 3 tbsp olive oil in the Dutch oven, add garlic, chopped shallots and sliced onion and continue to brown ingredients. Add stock, wine, herbs, mushrooms and celery and carrots and let that simmer on a wood stove (or regular stove) for several hours or until fork tender. Add the cubed potatoes during the last hour of cooking. You can thicken the broth with spelt flour. I do not thicken the broth but wait until the juices cook down and the broth is thick and flavorful. It took six hours, from start to finish, to make this stew on the wood stove - but it was worth all the effort! Create a green salad to go with your pot of stew and enjoy with a friend.
