I’ve been following the “Blue Zone” series on CNN, which profiles people living in parts of the world where longevity is the norm not the exception. One such place is Ikaria – a remote island in Greece. The Ikarians credit sex, laughter, naps, red wine and a healthy dose of beans to their longevity. Beans might work in Ikaria where the pace is slow and the stress is less, presenting few digestive problems. As a medical intuitive (one who has a “gift to see into the body) I see over an over again, people who just can’t digest beans well – most noticeably soy. For the people who suffer from gas and bloating I suggest using 2 digestive enzyme capsules when consuming beans. I love that in Ikaria bean dishes are drizzled with olive oil, not cooked in olive oil – making them healthy, digestible and delicious.
